March 26th is National Spinach Day! You probably refused to eat it as a kid, but now I bet you can’t get enough! Originally from Ancient Persia, most spinach is now produced in China and the United States.
You can eat your spinach raw or cooked and alone or with lots of delicious toppings. It’s a great source of calcium, folic acid, fiber, protein, calcium and vitamin A, C and K. The leafy vegetable is also loaded with antioxidants and can help improve your cardiovascular and gastrointestinal health. No wonder Popeye the Sailor man is strong to the finich!
